Daria's 'Super' Super Bowl Chili
Forget HD and surround sound! On Super Bowl Sunday, the biggest expense in the Dolan household will be the ingredients for making a super-sized batch of Ken's favorite chili. We heard from many of you how much you enjoyed Daria's meatloaf recipe, so here is her just-as-famous chili recipe:
1 tablespoon salad oil
2 pounds lean ground beef
1 cup chopped onions
1/4 cup diced green pepper
2 large garlic cloves, minced
2 - 16 oz. cans of tomatoes, or 4 cups chopped, peeled fresh tomatoes
1/4 to 1/3 cup of chili powder
1 1/2 teaspoons of salt
2 - 16 oz. or 17 oz. cans of drained kidney beans
About one and a half hours before serving, heat salad oil in a 5-quart Dutch oven over medium-high heat. Add and cook ground beef, onions, green pepper and garlic until onion is tender (about 10 minutes), stirring frequently.
Add tomatoes and their liquid, chili powder and salt. Heat to boiling.
Stir in kidney beans; heat.
Serve in soup bowls.
